Porcini and chanterelles, which we call "Herrenpilze" (gentlemen's mushrooms) and "Eierschwammerl" (egg mushrooms), are the crowning glory of what the mountain forest presents us at the end of summer. They not only make the mushroom picker's heart beat faster, but also play a very special role in Alpine autumn cuisine. But even lesser-known species such as the parasol mushroom, whose large caps are prepared like veal schnitzel, or the often overlooked milkcap mushroom with its spicy aroma are delicacies of the forest that grow in our national park region in virtually organic quality.

Preserving the mushroom harvest - which is usually plentiful here - for the winter also plays an important role: In addition to classic methods such as drying or salting, marinating in olive oil, balsamic vinegar and herbs is one of the most delicate ways of preserving, which has been preserved here from the former Austro-Hungarian regions of northern Italy.

As part of our mushroom special, we take you to the best mushroom spots in our Mölltal (under the strictest secrecy, of course!), search together, give you tips on how to find and identify them safely. Back at the hut, we then prepare a regional mushroom menu and, if there is enough prey, we also preserve mushrooms to take home. These are vegetarian culinary delights that will also convince "meat lovers".

 By the way, late summer is still a real summer here on the south side of the Hohe Tauern and ideal for mountain hikes and climbing tours in the high mountains. Due to the special microclimatic situation, the risk of thunderstorms in the evening is low, the visibility on the peaks is perfect and with a north foehn, the daytime temperatures can quickly rise to 25 °C.
